Lately

Remember how I was having too much fun last weekend to even think about my blog post that I had all set and ready to go? Yeah, I barely do either…

But I posted it for you on Monday because I didn’t want it to feel inauthentic if I posted it any later. That’s the thing about these lately post’s. They vary greatly depending on the day and my mood. Sometimes happy, sometimes sad/depressed. I’ve realized the more honest I am/show my inner (yikes) Bethany, the better of a response I get from all you great folks.

Thank you all for being my therapist and my journal entry. I have been living the most hectic life for the past 4 months since becoming a yoga teacher and even though I forget what it’s like to have a free night or weekend I wouldn’t trade it for the world. This journey has been incredible and the friends and yogi’s I’ve met along the way have surpassed any wish I could have had about chasing this dream.

Yes, I wish I had more time in the day to spend on my blog, connecting with friends/family or going to the grocery store to wander (Whole Foods, I’m lookin’ at you). But I know that this is just a season and I thank God for Mikey and his calm to my storm. If he has taught me anything over the past for months it is PATIENCE.

“Patience young grasshopper.”

I don’t like being patient. I’m a Millennial, I’m not supposed to be patient. I’m supposed to do everything all at once and get what I want when I want it in return, right?  As Omarion so wisely put it, “That’s how it post to be”.

SO cheers to a summer that has been the best, although it ain’t over yet. Cheers to learning to be patient and enjoying the world around me. And cheersssss TO THE FREAKIN’ WEEKEND!

My plan for the weekend is to bake, cook, eat and sleep. This is a weekend of relaxing and prepping for next weekend up in WI with my besties. My 3 best’s from high school and their mate’s are all heading up for our 10 year high school (ew, gross, how has it been 10 years) reunion/some fun in the sun. I hope you have some plans to relax over the Holiday weekend before the craziness of back to school/fall events begin.

I must be hungry because I’m sharing a lot of food in this lately post…but life is about sharing food together, right? Food like this beautiful polenta from my new favorite FAVORITE website. If I could live in a website/kitchen/blog it would be Sunday Suppers. They have cookbooks. I want to buy them all and be a part of their team. It is literally everything I have inside my brain. Karen Mordechai (the founder) is my spirit animal (so is Kristen Wiig).

I have a knack for finding favorite posts in a foreign tongue. Mikey and I fell in love in Spain so that can only mean one thing, it’s a sign and we need to buy a house there. It’s an afro of knots due to the fact that I went platinum in the winter and it is now fried to oblivion. Top knots are one of my only options and I am thanking my lucky stars that my hair style of choice is actually trendy right now. I know it won’t last forever and I’ll be the woman who is stuck in her hair generation forever (like the women with the 80’s bangs/layers like Farrah Fawcett that they just can’t seem to shake). I have been rocking a high bun since Jr. High and I don’t plan on stopping. I love the site Honestly WTF and I know I share things from there often (like, maybe even this same post) and I hope they keep it up because the inspiration they are throwing off is magical. 4058357ef4a95e54ef198ea5110dda63

Homemade Enchilada Sauce

I made some homemade enchiladas for a good friend of mine who had twins a few weeks back.

I wanted to try a new recipe so I scoured the internet until I found a few things that looked good and tried. The enchiladas were a little sweet for what I was used to but this sauce that I made for them is super easy and super delicious. When I buy enchilada sauce in a can I always feel like it is lacking in flavor so I was super happy when this recipe turned out to be great.

It would be a great addition to my old go-to enchilada recipe. They are already sooooo yummy and a great freezer meal if you’re looking to plan ahead or want to whip something up on the fly during the week.

This sauce has a nice smoky flavor from the fire roasted tomatoes and the different spices really make for a rich, deep flavor. I think when I make this again I’ll saute some onions and garlic to blend in with the tomatoes, but otherwise I was happy with the sauce.

Sometimes it’s the little things about a homemade dish that really deepen the flavor. Buying a can is easy but it never tastes quite as good.

I never really liked Mexican food until I was in college and even then I only liked chimichangas. Like, I remember going to a restaurant with Mikey’s family and they made me a special chimichanga because they weren’t on the menu. Now the literal last thing I would ever order is a chimichanga and I could eat Mexican food for every meal. Although enchiladas are also not my first choice I do love them when I have them. The smoky, spicy flavor that is cooked into the tortilla really can’t be beat (recipe coming soon I promise!!).

I don’t know what it’s like by you…but the weather has turned here and it’s cold! I am going to make some soup tonight but these warming enchiladas would also make a great warm meal on a day like today!

Lately

I meant to post this on Friday…I was at a girls weekend in Lake Geneva and had way too much fun. Totally forgot to post this! So here is a belated “Lately” post for you!

What would you do if someone put you on the spot and said, “sing me your favorite/best rap”?

Think about it…you have 5 seconds. GO.

This happened to me this morning after teaching yoga and luckily I was feeling awake and energized so I was able to think on my feet. My first go to was 1-2 Step by Ciara. You know, “I shake it like Jello make the boys say hello”…that one.

I then proceeded to rap through Lose Yourself by none other than Eminem. It was fun.

I used to take myself so seriously and would get so embarrassed by the dumbest things. I still get embarrassed a lot and nervous in certain situations…but I have learned to embrace it and just see what happens. Chances are I’ll get sweaty, or my face will turn red (probably both) but life is too short to care. I wish I could tell my past self to stop caring and worrying so much. The thing I love most about getting older is that I give considerably less eff’s than I used to and it is marvelous.

I challenge you to stop caring so much about what anyone thinks and be YOU. Because you’re awesome, and you’re quirky, and sometimes you ARE super embarrassing to be around or even look at…and that’s freaking beautiful.

Here are some things I’m inspired by lately and hope you are as well! Keep being beautiful, my friends. I love you, you big freaking weirdo.

I want to turn our rooftop into a giant pillow/blanket fort and spend the night with friends watching a movie under the stars (who am I kidding? there are no stars in the city)…So under the airplanes and satellites).

Fig, Blue Cheese & Pecan Salad

Sometimes we eat healthy things at our house.

On the weekends we eat like absolute fat kids. But then Monday rolls around and the detox must begin again before the next weekends retox. It’s a vicious cycle.

This is the best salad I’ve made this summer.

Not only did it look pretty, it tasted amazing. Sweet and salty with a hint of funk from the blue cheese…it’s everything you could ever want in a salad!

I could eat salad for every single meal of my life but living with a man can make that difficult. They require things like meat, red sauce and starches (at least the man I live with does).

Mikey does love to eat healthy and we try to stick to lean meats/proteins and tons of veggies and fruits during the week (which leads to binging on pizza and Chinese foods on the weekends).

Lately

It’s already Friday.

That doesn’t even seem possible. The days they are a flyin’.

I hope you are having a great week and enjoying the summer weather and festivities while you can! My Mom is in town this weekend and we have a full schedule of events planned! I’m looking forward to exploring my own city and spending some quality time with Mi Madre.

I hear that 70’s style is making its way back and I am SO EXCITED. I’ve always had some hippie in me and love love me some chunky shoes, bellbottoms and flowy tops. This outfit is 100% what I would love to wear every single day. I am obsessed with it. Her legs go for days and that hat…I just wish I could have been alive in the 70’s. Ever since I was little I have been obsessed with that era. There was something so lighthearted and beautiful about it (minus the crazy drug use…or maybe that’s why everyone seemed to be so happy?). Either way, the fact that I can bust out my favorite jeans (yes, I kept some of my high school flared jeans) and still fit into them…I can’t be mad about it.

They are from a Japanese blog and I don’t know what any of the details are about them…but I want to go to Japan and I want to find the creator of these immaculate cookies. 3e01fa6c02facd28709da3c04d8dbf55 Mikey and I plan to finish some updates and styling in our house this fall and we want to do a low bookshelf/shelf like the one below. I was having an obsession with this beautiful leather floor mat for a few minutes. I then clicked the link and realized it is a VINTAGE GYM MAT. I threw up a little in my mouth.

The things that have discharged onto this mat can not be imagined. No matter how beautiful, how cleaned…It just makes me uncomfortable. Even if you told me it was never used…I just don’t know if I could do it. It does, however, look stunning and I want that room to be in my house…But I just can’t think too long about where it’s been! 119273f82bf28c705752eee506d65297I think I’m completely over my whole animosity toward bacon thing.

I still wouldn’t be able to just eat a piece (maybe I could)…but I love the salty and smoky flavor it adds to most dishes now. This BLT with heirloom tomatoes, smoked gouda, and fried eggs…hang on a minute while I stuff my face full of all this flavor. Not only is it beautiful to look at but I know for a fact each bite will be a little different and a little better. Runny egg + sandwich = heaven. 4078e3942d80f324f2bd3394b83f8386 And last but not least, some pretty cupcakes.

Pear cupcakes none the less. They are from a Swedish blog (apparently I find my inspiration on blogs I can’t actually understand this week) and I couldn’t find a recipe link, but I think the inspiration is enough to get started. I’ve never thought about a pear cupcake but I’m sure it would be delicious with a few spices and a light, fluffy buttercream. So pretty and I imagine just as tasty as they look.
