So I had this super amazing chickpea salad a few weeks ago.
I tried to find the recipe EVERYWHERE.
I never found it and just made up what I could remember and used those ingredients.

I.
Am.
So.
Sorry.

I know it has been way way too long since my last post.
I have been so busy. The month of July is so packed full of fun and amazing things which has been AWESOME…but it leaves my blog/bloggers starving for some TLC.
Not only has this month been great so far, but there is so much to look forward to! This weekend we have a triathlon that Mikey will be doing for his 3rd year in a row. I am going to do the running portion…NOT the whole thing!

Mikey and I spent the 4th at his cabin, relaxing and laying in the sun.
My friend April is coming to Chicago for work and will be here this Monday through MY BIRTHDAY!!!!
That is secretly why I love July so much π
Last week I had a pound of frozen, ground turkey and zero inspiration.
I googled “ground turkey recipes” and found a super easy and fast meatball recipe.
Sold.
Meatballs usually are not something you associate with “Asian Cuisine”, at least not in my life…when I hear meatballs I think:
Pasta. Bread. Garlic. Parmesan. Carbs. Marinara. Carbs.
So I am pretty excited to find a meatball that doesn’t have me reaching for copious amounts of bread all night long!
Sorry it has been so long since I put up a post.
I have been so so so so busy. Which is great, because it means I’m having a super awesome summer.
But it is bad because I can’t bake and cook as often as I would like.
And that makes Mikey sad.
He loves when I cook for him. And sometimes I don’t want to and he has to Β eat really bad/frozen things.
I’m going to cook something delicious tonight. And hopefully bake too…but this LAME Chicago weather makes me want to curl up on the couch all night…
But for now, I will share this recipe with you.
It’s the easiest.
But, Mikey loves it.
And I wanted to make him smile.
So I made it for him. And he was happy about that.
Sometimes I wish that I could bend the truth.

Buuuuuutttt I can’t.
I have THE most guilty conscience.
I want to tell you how this was soooo easy and how it was the most delicious thing ever.
But I made this for a family dinner on Friday, and it was a flop.
I was very distracted. This dish needs your complete attention.
I burnt the first batch of Whiskey caramel sauce and the bottom of the bread pudding was more like scrambled eggs.
Gag.
Literally.
Mikey did.
