So I had this super amazing chickpea salad a few weeks ago.
I tried to find the recipe EVERYWHERE.
I never found it and just made up what I could remember and used those ingredients.
Well not the recipe…but the ingredient list.
Turns out this fantastic salad is sold at Costco.
If you are a member, buy this salad pronto.
What I’m going to do is leave you two recipes.
One for my salad, and one that i’ve made using the proper ingredient list. So note that I have not made it…but recommend it 🙂
Also, where in the WORLD can I find tri-colored chickpeas????
This is supposed to be Tri-Colored Chickpea Salad. But instead it’s just Chickpea Salad because I don’t know where on this earth I can buy canned tri-color chickpeas.
I guess we’ll all have to get over it and stick with straight up garbanzos for today…
Not so much fresh as of this past weekend.
I killed it.
It fried and shriveled right up.
My mom told me that it is hard to kill cilantro…
She said it keeps coming back…

Now imagine it with yellow peppers and a creamy citrus vinaigrette.
Make this salad and pay close attention to the next few lines if you do indeed make this salad.
Here are a couple side notes. No matter what, make the second vinaigrette. I really think that recipe will be way better. I guessed on all the measurements, so use some caution and add more or less ingredients when making the dressing.
The garlic makes for some HARSH breath so feel free to leave that out of my recipe. The onions are enough!
Let me know if/where you can find tri-color chickpeas. Or garbanzo beans. They are the same.
Mostly what I advise is that you try to make the second recipe listed. Make the tri color recipe, and if you can’t find tri-color beans, just use regular chickpeas.

Recipe: Chickpea Salad: (mine)
1 Can Chickpeas, drained and rinsed
1/2 Red pepper, chopped
1/4 Cup red onion, chopped
3 Stalks green onion, chopped.
1/4 Cup fresh cilantro, chopped
1/4 Cup Orange Juice
1 Tablespoon Honey Mustard (any mustard will do)
1/4 tsp Pepper
3-5 Tablespoons Soy Sauce (to taste)
Recipe: Tri-Color Chickpea Salad (use this one!)
1 Can Tri-Colored Chickpeas
1/2 Red pepper, chopped
1/2 Yellow Pepper, chopped
3 Stalks Green Onion, Chopped
2 Tablespoons Red Onion, Chopped
1/4 Cup Cilantro, Chopped
Recipe: Vinaigrette (use this one!)
1/2 Tablespoon Sugar
1/8 Cup Olive Oil
1 Tablespoon Lime Juice
1-2 Tablespoons Orange Juice
1-3 Tablespoons White Wine Vinegar.
Salt and Pepper to taste.
