Banana Bread Scones with Cinnamon Sugar Filling

Brunch is served!

Grab your coffee (or a refill), grab a scone, sit back and relax.

The weekend is here! And a long weekend at that! Which means you have time to make breakfast or an afternoon treat for your family or friends!

These scones are amazing because they taste like banana bread and they have a gooey cinnamon and sugar center. They are not as dry as a typical scone because the mashed banana adds some moisture and the gooey center keeps them from drying out as well.

I will admit my dough was not chilled enough and my scones spread out like crazy in my pan, forming one giant scone…I was able to salvage them and cut them into some odd triangular and square shapes. Not the most beautiful things in the world…but they tasted great!

Coconut Cupcakes with Chocolate Buttercream

Samoa Girl Scout Cookies were my muse for this coconut cupcake.

Vanilla coconut cake, chocolate frosting, toasted coconut, a drizzle of caramel…

My favorite flavor Girl Scout Cookie changes every week. One week it’s a Samoa, the next it’s a Thin Mint or Do-si-dos.

I have all three in my freezer and was inspired to create a cupcake like the Samoa. It turned out great and I highly recommend you try them! I added caramel to a couple but didn’t like how the pictures looked and decided to scrap the caramel on the rest.

I was never a Girl Scout. I don’t know if I even really knew about Girl Scouts until I was too old and it was weird to join. But I sure do love the fact that cute little girls ask for money in exchange for boxes of the worlds most amazing cookies. So good. Also, this has nothing to do with these cupcakes, but I also love that Boy Scouts sell bags of caramel and cheese popcorn for like $15 and I still buy it every time! WHO CAN SAY NO TO CUTE KIDS SELLING MY FAVORITE FOODS?!?! Whoever is running those Scout’s is a genius. I will never say no to cookies or popcorn. It would go against everything I stand for.

Classic Chocolate Buttercream Frosting

I made this frosting to top some coconut cupcakes and figured I would share the recipe for the frosting first.

It is like a giant fluffy pillow with a slight chocolate flavor and a smooth buttery finish. In other words, heaven.

As you know, my Mom is the reason I bake, she taught me everything I know and was constantly baking and in the kitchen when I was a kid.

She often made frostings and would always save the extra frosting for my Dad, who loved to put it on graham crackers. He’s a genius. It is now one of my favorite late night snacks and there is almost always a small container of frosting somewhere in our freezer for those late night cravings!

Pretzel S’More Crunch Bars

These bars were a bit of an experiment…

And we all know that sometimes experiments work, and some times they flop. These bars were a little bit of both!

The top was sweet and salty and crunchy and delicious.

The crust was a crumbly mess that was more like sand and less like crust…

I adjusted the ratio of butter and flour in the recipe below and I think if you follow that these bars should be a home run! You could also make them with a little bit of graham cracker mixed in with the pretzels as well!

I made these bars with hopes that summer would be here soon! S’Mores remind me of warm summer nights up in Wisconsin and I CAN’T WAIT for those warm nights to return to the midwest again!

Chocolate Cake with Oreo Cream Cheese Frosting

We had a surprise party for my sister-in-law a couple weeks ago and I made this gigantic cake for the party. Processed with VSCOcam with c1 preset
I did not realize it was going to be so huge! It was probably 10 inches tall (at least) and weighed a ton!

The benefit to such a big cake is that you can cut the slices thin and the pieces will still be huge! It was a super easy recipe and you could modify the frosting and cake to fit any flavor profile you prefer!

I always struggle when it comes to making birthday cakes because I want to make sure the person being celebrated loves the cake, but that everyone at the party likes it as well. I had a million different ideas but ultimately went with this cake and it seemed to be a hit. I don’t know if I’ve ever met someone who didn’t like Oreo’s in their desserts!

If you remember the Salted Caramel Vanilla Bean cake I made a few weeks ago…you will probably notice a trend in the style of these cakes. It is my new favorite way to decorate a cake. It is way easier and I like the rustic vibe you end up with. I recommend trying this style cake and experimenting with all different sauces, flavors and frostings!
