These bars were a bit of an experiment…
And we all know that sometimes experiments work, and some times they flop. These bars were a little bit of both!
The top was sweet and salty and crunchy and delicious.
The crust was a crumbly mess that was more like sand and less like crust…
I adjusted the ratio of butter and flour in the recipe below and I think if you follow that these bars should be a home run! You could also make them with a little bit of graham cracker mixed in with the pretzels as well!
I made these bars with hopes that summer would be here soon! S’Mores remind me of warm summer nights up in Wisconsin and I CAN’T WAIT for those warm nights to return to the midwest again!
Recipe: Pretzel S’More Crunch Bars
Makes 9×13 pan, serves about 16-20
Pretzel Crust:
1 1/4 Cups Pretzels, Crushed (measured once crushed)
1/4 Cup Flour (Or crushed graham cracker)
1/4 Granulated Sugar
1/2 Cup Butter, Melted (add more if crust seems too dry. you want more of a wet sand texture)
Filling:
1 1/4 Cup Semi-Sweet Chocolate, melted
1 Cup Mini Marshmallows
Topping:
1 Cup Marshmallows
About 1/2 Cup Pretzels
Directions:
Preheat oven to 350 degrees.
In a bag or with a food processor, puree the pretzels to a small crumble texture.
Melt butter in the microwave and add to pretzels.
Combine with sugar and flour and mix well. Add more melted butter to mixture if it seems too dry. The pictures/bars I made did not have enough butter and included too much flour. I altered the recipe to what I think should work but will leave it up to you to add more butter if needed. You want a barely wet sand texture. Add up to 4 more tablespoons or more if needed!
Once combined, pour pretzel mixture into a 9×13 pan lined with parchment and press firmly around edges and though center until an even layer has been made. Bake for about 8-10 minutes or until crust is a bit browned.
While crust is cooking, place chocolate chips in a microwave safe bowl and heat at 20 second intervals, stirring well each time until melted. Add 1 Cup of marshmallows and stir until melted.
Once crust has baked, remove and as best you can, clump chocolate mixture over crust. Spread as well as possible and sprinkle with 1 cup of marshmallows. Place back into oven for about 3-5 minutes until marshmallows puff up and chocolate spreads a bit.
Remove from oven and press whole pretzel pieces into the warm chocolate and marshmallow.
I used my kitchen torch to brown the marshmallows and then let cool completely, about 2 hours. When serving, I melted down some marshmallow fluff with hot water and poured that over top. We also tried it with salted caramel poured over and thought about trying a warm melted marshmallow/peanut butter drizzle as well.
