Lets blame my recent absence on jet lag…
Although we both know two weeks is more than enough time to catch up on sleep, it seems like a better excuse than, “I’ve been too busy and haven’t made time for you”.
Since I have been so busy, my time to relax or spend any time in the kitchen has been fleeting. Because of that, I’m going to try and share a glimpse of my amazing trip abroad.
We started in Munich, Germany. Did you know the best way to beat jet lag to drink beer, without stopping, until you fall asleep in your chair?

I have been busy.
Thankfully, my phone camera is pretty great and I was able to document this pickle making extravaganza.
Pickles are in my top 10 favorite foods and I can’t believe this was my first time making them.
The thing about canning is that you have to be patient. Truth is, I don’t know if these are any good yet! Tomorrow I finally get to crack open a jar and see if they turned out OK…so stay tuned and assume no news is good news!
The chaos of spring/summer has arrived!
I am sad to admit, but feel I have to be honest with you, that my blog posts may not appear as often as they have been or as much as I would like them to.
It won’t be like that forever, just for a couple months.
Weddings, showers, bachelorette parties, birthdays, vacations, weekend trips up north, new babies (not mine), moving/buying a house (hopefully) and SO MANY other exciting things are in our very near future.
But, lets not get too ahead of ourselves.
Lets talk about this amazing coconut cake.
Growing up, I always preferred the slice of cake with the least amount of frosting on it.
I was the quiet one who waited for a center piece, while everyone else was fighting over the edge/corner/giant flower-frosting pieces.
I have changed.
I am now, thanks to my Mom, a frosting “snob”.
This is the single greatest buttercream frosting I’ve ever made.
Regular buttercream, which is butter, vanilla and sugar, just hasn’t been cutting it for me lately.
