Peanut Butter Dream Bars

It was a cold and rainy day and I didn’t want to leave the house. But I wanted to bake. So I scrounged around in my pantry and freezer and these bars are what were born.

There is a gooey layer of peanut butter caramel sauce sandwiched between an oat and butter crumble and then topped off with chocolate and Reeses Pieces…What’s not to like?

Be careful when making these bars…the sweet and savory combination is dangerous and you may not be able to stop going back for more!

French Onion Soup

I always love when friends or family ask me to post a specific recipe.

It takes the pressure off of me to think about what to cook and gives me a mission: find the perfect recipe and make it work.

Mission accomplished.

My friend Catherine asked me to post a recipe for French Onion Soup (which I was excited about since it just so happens to be one of my favorites).

I searched high and low and compared a thousand recipes before going with this classic recipe from Balthazars restaurant in New York. The sweet onion smell will fill every nook and cranny of your house (we smelled like onions for a week). Although it takes time to make, it is well worth the work. The longer you caramelize the onions the sweeter they become so make sure you set aside a couple hours to enjoy the process. And as though caramelized onions are not enough…you top it off with a thick layer of melted gruyere cheese…heavenly!

Oatmeal Cream Pies

Growing up, everyone had their favorite Little Debby dessert.

My favorite was the Nutty Bar, followed by the Cosmic Brownie and the seasonal Be My Valentine Cakes (vanilla flavor). You know, those pink heart shaped cake’s similar to the Zebra Cake? …I’m embarrassed by the fact that I sound like a Little Debby connoisseur. I think I have tried nearly all of them. Yikes…

I was never big on the Oatmeal Cream Pie’s as a kid, and I haven’t had a Little Debby in YEARS, but I have a feeling that if I were to try them again or for the first time now, the Oatmeal Cream Pie would be one of my favorites.

(Side note: Little Debbie spells it Oatmeal Creme Pie. I am sticking with Cream. Spell it how you like)

Mikey’s favorite Little Debby was the Oatmeal Cream Pie…I am pretty sure we have had extensive conversations about all the different Little Debbie snacks and which is our favorite and why…Is that normal? Tell me you have had this conversation with someone as well…

All this being said, when I stumbled upon a recipe for Oatmeal “Cream” Pie’s I decided I had to give them a try.

I must say that these are now at the top of my “favorite cookie of all time” list. The cookie itself is soft, chewy and flavor packed. It could easily hold its ground and be served without the filling, as a plain cookie, BUT, when you add the marshmallow cream in the center they’re taken to another level. They are out of this world.

I highly recommend you move this recipe to the top of your queue and try them immediately!

Greek Salad

Signs of spring have just begun to appear here in Chicago bringing with it the thoughts of warm weather and long sunny days.

Spring also reminds me that summer is coming and that it is time to prepare for swim suits and shorts…which means healthy eating and exercise. Mikey signed up for the Chicago Marathon in October and healthy eating has become a priority as he gets geared up for training.

So here’s a nice, healthy recipe to celebrate the new season. This salad is fast, delicious and can be altered depending on the vegetables and herbs you have on hand. Toss them all in a simple vinaigrette and you have a light lunch or dinner salad!
