Have you missed me?

I’ve missed you.

I was on spring break last week and I did a whole lot of nothing…except bake, clean, pamper and spend time with friends.

It was amazing.

But I really did miss you and have been dying to get a recipe posted!

What better way to come back from my hiatus then with one of my favorite foods ever!

Popcorn.

It does not matter what form it comes in, just as long as there is lots of it.

This recipe comes from my Mom and is the best caramel corn out there.

Aside from Garrett popcorn, which is the greatest in the nation.

Marshmallows, graham crackers, white chocolate, yellow cake mix…

My language primarily consists of things like marshmallows and graham crackers…closely followed by, I’m going to kill the cat…did you remember to record that?…I don’t know, I need coffee first…

Mikey speaks my language…

Rice Krispie Roll

This is a simple recipe.

Which deserves a simple post.

We are talking major childhood (adulthood) favorite here!

I seem to remember one of my uncles ex-girlfriends making this for us once.

My mom says it is a recipe from one of my Aunts…but I disagree.

I faintly remember this ex because after she made this rice krispie roll for us…she became my favorite.

Guinness Cupcakes with Cream Cheese Frosting and Whiskey Caramel Glaze

This is by far the best chocolate cake I’ve ever made/tasted.

Who knew that a can of Guinness Beer could produce the richest and most decadent chocolate cake?!

I made these in lieu of St. Patricks day/my brother-in-law’s going away party.

You see, my brother in law, Timmy has been living with Mikey and me for the past 2 months while he goes to beer-brewing school.

Yup, that’s a thing.

He is in school to become a brewmaster or master brewer of beer or something like that.

He does (did) 2 months here in Chicago at a school called Siebel, and on Saturday leaves for Germany where he’ll be for the remaining 4 months of the program.

Not bad, eh?

So…we had a going away party for him and paired all of the food with beer, obviously.

Being a baker I decided I had to make a beer inspired dessert…which is where these little babies were born.

Scotch-A-Roos

Scotch-A-Roos are not blog worthy.

I realize this and I apologize for the fact that you made these in 3rd grade.

But I will not apologize for the fact that they are 1. Super easy/don’t require turning on an oven in these record breaking and scorching Chicago temps and 2. Still delicious after all these years.
