Chocolate Peanut Butter Cake

I made myself a cake to celebrate the fact that I have 5,000 followers!

THANK YOU SOOOOOOOOOOOOOOOOOOOOOOOOOOO MUCH!!!

I am so amazed that what was once an idea I was embarrassed to try is now a hobby that I love so much! I feel blessed by all the support and new friends I have made thanks to Mikey’s In My Kitchen!

Mikey doesn’t like peanut butter, but It is my absolute favorite. So I decided I would make something that I love. I don’t normally choose chocolate cake over white cake, but this just seemed too good to pass up. And I’m so glad I made it.

This cake is soooo rich (but in a good way) and the peanut butter frosting is out of this world. I could have eaten the whole bowl with a spoon!

It’s a bit time consuming to make, but worth it in the end. Especially if you make it over the course of a couple days.

I am so honored by all of the kindness and support I’ve received from friends, family and followers around the world! There is nothing I love more than baking and cooking and it has been so fun to watch my blog progress over the past couple years. From the photos (which started out soooooo bad) to the content, I have been given so much constructive criticism from people, which means so much to me!

Thanks for sticking with me through this journey of my life through food. Thanks for reading through my rants, stories and opinions from things like food and drinks to cats and weather. I feel blessed to have the time and means to bake and cook for the people in my life! It has been such a learning experience for me as I struggled through figuring out how to upload pictures and add links to my blog and take pictures of my food when all I wanted to do was eat it and be done. There is so much that goes on that is way less glamorous than my blog may at times seem. The kitchen behind me is a disaster, I have chocolate on my face and flour in my hair. There are dishes that take hours to wash, and sometimes I burn things and then cry. But through it all, I have found that it is worth the work when I publish a recipe and receive sweet comments from my followers out there.

Mikey has been my cheerleader from the very beginning. He encouraged me to start the blog and always gives me that extra nudge I need to keep baking. Mikey will often tell people about my blog when I typically don’t because I feel awkward and he thinks it’s “cool” which usually results in me convincing people it’s a weird hobby. But it makes me happy that he is so proud. He is my editor and my #1 fan and I would not still be doing this if it weren’t for him.

I hope you enjoy this celebratory cake as much as I did!

Lately

I totally forgot to publish my “lately” post yesterday because Mikey and I were driving up to my parents place in Wisconsin. We are up here for the weekend to hang out and relax in the beautiful Fall weather. I hope you had a great week and are enjoying your weekend so far πŸ™‚ I spent lots of time baking last week and can’t wait to share a delicious cake with you next week!

It’s time for hot chocolate and homemade marshmallows. I promise to make some and share the goodness with you.

Mikey and I are looking for a way to bring more light to our stairwell. I love this hanging fixture but wonder if Norman will think they are toys hung just for him? I seem to always find myself back at this website…I love all the ideas and the inspiration I find atΒ Houzz.com

I don’t know what I want more…the shoes or the legs? The DISC Journal wins my vote for most inspiring Tumblr.

I can’t believe this sweatshirt exists. I really think I need it. It’s from this fantastic website, PLASTICLAND. They have super random gifts and clothing (great for Halloween costumes!).

Chocolate Chip Vanilla Pudding Cookie

It seems like everyone is always on the hunt for the perfect chocolate chip cookie recipe (I know I am).

My hunt is over. And hopefully yours will be too.

The “perfect” cookie in my opinion is a little crunchy around the edges and then mush-city on the inside. These cookies are that and then some.

The secret? A packet of vanilla instant pudding.

The dough is absolutely insane. I ate so much I got a stomachache. And I continued to eat through the pain once I discovered how amazing the warm and gooey cookies were after I actually baked them.

Make these. TRUST me. They will be your new favorite.

They are so easy and so adaptable too. You could use any type of sugar, any type of candy or chocolate and any flavor of pudding (I saw a pumpkin spice flavor! Pumpkin spice cookie with cinnamon chips? I’ll make that).

Hope these cookies help get you through the mid-week slump! And if you don’t want to bake tonight…at least make some dough πŸ˜‰

Lately

I MEANT to post this while Mikey and I were gone last Friday…but I was too busy having fun…so here is the delayed post from last week!

Since Mikey and I are in Denver for the Great American Beer Fest (GABF)…I figured I would include some beer-related things I’m currently loving.

We are here to visit my brother-in-law who is a brewer in Aurora CO. The brewery is called Dry DockΒ Β and I’m proud to say they won TWO bronze medals at GABF this year! One for their Apricot Blonde (which is one of my favorites) and the other for their S.S. Minnow Mild Ale.Β  If you’re ever in Denver make the short trip out to Aurora and go here.Β  You won’t be disappointed.

This is their delicious (and my favorite) Octoberfest.

Mikey and I went to the Dry Dock Brewery to help his brother, Timmy make a Firkin

I helped him pour in some lime juice and coconut shavings for a coconut-lime cream ale…yum!

Hanging out with the brewers after.

Our last night. That’s Mikey’s cousin, Lindsey, in the middle.Β  We stayed with her all weekend and had such a fun time laughing our heads off and making new memories.Β Processed with VSCOcam with f2 preset

This beer bread from Dine & Dish looks pretty tasty!

Here is a recipe for a Beer Cheese Soup. Yum!

NOW…I don’t necessarily love every beer listedΒ here…but I think it’s super cute and love that New Glarus is at the very top of the beer list!

Pumpkin Bread (The Best)

You can say a lot with a loaf of bread.

Thank you…I love you…I’m so sorry…congratulations…the list goes on.

DSC_0148

My favorite way to send someone love is to bake for them or give them a gift. I recently made this bread for my brother-in-law and his family after he tore his Achilles (ouch!) and couldn’t stop making more loaves after. It is so quick and easy to make and it smells and tastes amazing. Your house will smell soooooo good your neighbors may invite themselves over.

I love to bake for people because it is my way of giving them a hug and letting them know I care. Plus, I know that (for me at least) baked goods are comforting in times of sadness and celebration!

DSC_0029

This pumpkin bread has found a place in my heart and is now a fall season STAPLE. I can’t stand the sight of anything pumpkin scented or flavored until the month of October and then all of a sudden…I love it. Then after Nov/Dec I start hating it again. It’s a weird thing.

I haven’t made a ton of pumpkin recipes but the few that I have are absolutely amazing! There is this Pumpkin Cake with Caramel Walnut Topping.

Then there are the worlds greatest Ginger Spice Cookies with Pumpkin Dip…you need to make them. Or at least the dip and then buy some gingersnap cookies…too good.

I also made some Pumpkin Cream Cheese Muffins that were pretty great too…

I think that line up has something for everyone (unless you don’t like pumpkin). So go ahead and add a can of pureed pumpkin to your grocery list so you can spend some time in the kitchen this weekend!
