The title of these muffins is a bit of a mouthful…
I tried to omit certain parts but decided they are all necessary.
The blueberries, oatmeal and applesauce all play a very large role in making these muffins what they are, and therefore have to be included in the title.
We can just call them Boam’s for short.
Kinda like how I call Mikey’s In My Kitchen, Mimk.
It’s just so much easier that way.
These muffins are great because you don’t need to use any appliances other than your stove.
Just you, some bowls and a wooden spoon.
I am obsessed with the way blueberries photograph.
They take on so many different shades and reflect the light like magic.
These muffins would be perfect with any berry or other type of fruit and you can very the recipe depending on what’s in season.
You could do banana, pear, apple, strawberry, raspberry, peach and/or add walnuts or pecans as well.
You could throw in some chocolate chips or cinnamon chips if you’re feeling extra devilish.
Speaking of the devil/devilish things.
(no, I did not say “speak OF the devil”, as in I was just talking about someone and then they walked into the room. I mean speaking of the actual Devil/Satan, in the form of soap).
Yesterday I was getting ready to leave the house, picking up a bit and putting away some dishes…
I went to pick up the bottle of dish soap to put it under the sink when a trail of bubbles came shooting up into my eye.
The next 20 minutes consisted of me crying off all my makeup while trying to pull my contact out and rinse my eye profusely with contact solution.
Meanwhile, I left the water running in the kitchen sink and the refrigerator door wide open…
Once I finally got my contact out, I was able to soak my eye/face/hair with contact solution until the stinging went away (for the most part).
I then turned off the water in the kitchen and found my cat digging around in the refrigerator…
My eye is still red.
My cat is still full.
And I am now afraid of open dish soap bottles and will probably wince every time I, or anyone for that matter, picks up a bottle of the stuff.
Be careful.
I used to think the bubbles that flew out of the dish soap bottle were pretty. Sometimes I would squeeze the bottle just to see those little bubbles float around my kitchen (Am I the only one?!?!).
Never. Again.
Moral of the story is:
You should make these muffins.
Just watch your eyes when it comes time for the dishes!

Recipe: Blueberry Oatmeal Applesauce Muffins
1 1/4 Cups Whole Wheat Flour
1 1/4 Cups Oats
1 Teaspoon Baking Powder
1/2 Teaspoon Baking Soda
1/4 Teaspoon Salt
1/2 Teaspoon Cinnamon
1 Cup Unsweetened Applesauce
1/2 Cup Buttermilk (or 1/2 cup milk plus 1 Tablespoon white vinegar/lemon juice)
1/2 Cup Firmly Packed Brown Sugar
2 Tablespoons Oil
1 Egg, lightly beaten
3/4 Cup Blueberries (fresh or frozen)
Directions:
Preheat oven to 375 degrees.
Line a muffin tin with paper liners and set aside.
In a large bowl combine oats, flour, baking powder, baking soda, salt and cinnamon. Set aside
In a medium bowl combine applesauce, buttermilk, brown sugar, oil and egg.
Once the liquid ingredients are combined, make a well in the center of the oat mixture and pour the liquid into the center. Gently fold the ingredients together until just incorporated. Stir in blueberries and fill muffin tins nearly to the top.
Bake in oven about 15 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
