Since we already had our sugar fix for the week, I thought i’d share this fantastic pizza with you!
I found this recipe in Time Out Chicago magazine and had to try it.
It is a different take on your traditional pizza, which is why it is being called a flatbread.
I think it is called that so that boys won’t be afraid of it.
Pretty sure if I told Mikey I was making pizza and gave him this…
He would be disappointed.
It is simple to make and really decadent.
It would make an amazing appetizer for a party as well.
I got these beauties at Trader Joe’s.
I always love how happy the employees are at Trader Joes and wonder how they are always sooooo chipper.
While I was there this past weekend I asked the girl at the register if I could get a roll of quarters?
She directed me over to customer service where I got really nervous.
Why did I get so nervous?
At this time I’m sure I turned bright read and looked super confused.
They both started laughing and high fived at my misfortune.
I think they felt bad…
We became fast friends after sampling about 5 bottles (and a few refills) of delicious red wines.
Those quirky folks over at Trader Joes, drunk on their cheap wine and vegan muffins…love em.
I never care about a perfectly shaped pizza or flatbread.
Spread on your ingredients, add some salt and pepper and toss into the oven.
I hope that you like this very non-traditional take on pizza and that this inspires you to expand your horizons or make your own interesting flavor combinations.

Recipe: Plum caramelized onion goat cheese flatbread
One package pizza dough
2 Medium Red Onions, peeled, halved and sliced
3 Sprigs Fresh Thyme
2 Tablespoons Extra Virgin Olive Oil
2 Tablespoons Balsamic Vinegar
6-10 Plums (ripe, but still firm), pitted and sliced
4-8 oz Goat Cheese
For Garnish: Extra Virgin Olive Oil, Balsamic and Thyme leaves
If you want to make your own pizza dough, by all means do so. I am lazy/in love with Trader Joes ready made pizza doughs and highly recommend you try them if you haven’t!
So to begin, heat olive oil over medium heat in a large pan. Once heated, add the peeled, halved and sliced red onions along with three sprigs of fresh thyme to the pan.
Allow this to cook undisturbed for about 10 minutes, then stir and let sit undisturbed for another 10 minutes.
Then add the balsamic vinegar and salt and pepper to taste, allowing the onions to cook for about 5 minutes until the balsamic is reduced and no longer runny.
Remove from heat, discard thyme sprigs and allow onions to cool completely.
Roll out your dough into a desired size and shape on a generously floured surface.
Preheat oven to 400 degrees and place dough on a prepared baking/pizza sheet, or hot pizza stone (what I use).
Evenly spread the caramelized onions over the dough, followed by the sliced plums. Finish by adding dots of goat cheese throughout the top of you pizza and slide that baby into the oven.
Cook until the the crust is crispy and browned about 20-25 minutes.
Remove from oven and drizzle some olive oil, balsamic and a few fresh thyme leaves.
Slice up and enjoy immediately!
