Honey Pumpkin Buiscuits

It’s getting close to crunch time.

Thanksgiving is in 2 days and you and I both know you’re feeling the pressure. YOU GOT THIS! I promise no matter what you forget, no matter what goes wrong, you will still have an amazing time with friends and family.

If you’re still stressing about breakfast/rolls…I have your answer. Seriously. These little biscuits are so surprisingly delicious. They are just a teeny teeny sweet from the honey and the pumpkin flavor is just so subtle with a dash of spices…it’s the perfect Holiday biscuit. Served warm with a hefty amount of butter and a drizzle of honey, I think it’s the perfect way to start your Thanksgiving! Adding carbs first thing in the morning is always a good idea because it sets the base for the day, stretching your stomach and making room for what’s to come!

I made this a couple weeks ago for a family party and my nieces and nephews were the ones who couldn’t wait to get their paws on these “muffins”. I would actually make these year round since they are soooo light and fluffy and have a beautiful spice from the ginger, cinnamon and clove.

I don’t know about you but I am SO excited for the short week and the long weekend of Thanksgiving. We have managed to pack in so much time with family starting tomorrow as we’re driving up to WI for a night with my family and then lunch with my entire Dad’s side. We will then reload the car and head back down to IL to celebrate with Mikey’s entire family (and watch the Packers). We have Mikey’s 10 year high school reunion on Friday (WE ARE OLD) and then plan on spending time with his brother and girlfriend who are in from Denver. Needless to say, we won’t be bored…

As another year begins to close and the Holidays are here yet again I always love to look back at the year. What a crazy year of change for us! I am SO grateful and blessed by the life, love, friends and family I have and I can’t wait for another season of thankfulness, celebration, giving and love!

Lately

I feel like I’m getting back into the swing of things and it feels GREAT!

The pup is getting comfortable and I am actually able to spend more time getting things done rather than climbing up and down stairs to take him out every 30 minutes (although I’m still doing that). I was able to swap out the summer clothes with the sweaters (sigh) and get rid of a ton of old clothes, one of my favorite things to do! (Although I usually get rid of things and then can’t find them a year later…only to realize I got rid of it because I’m obsessed with purging).

I was able to clean my house too…well, almost. The dog was afraid of the vacuum and the cat was taking advantage of him and biting him…so that was an adventure!

Also, just in case you haven’t heard on the TV/Radio/Social media..winter is coming, and it’s coming tonight. Snow. Blah. BUT, we are due for some chilly weather I suppose since it has been 100% the best fall ever. I’m excited to bust out my winter boots and see how the pup plays in the snow.

You’ll notice that this lately post is very cold weather approved 🙂 Lots of cozy and delicious things. Because what else do you do in the winter aside from drink and eat all the things delicious while hiding under thick sweaters and blankets? Nothing. You do nothing else. Eat. Drink. Layers. Repeat.

I promise to get some good pictures of the pup this weekend! He’s like my baby and I want to document every stage of his puppy life. He’s sooooo fun and so chill (for now) and we are enjoying this cute stage while we can!

BTW, thanks for all the sweet well wishes and comments about the pup! I LOVE my followers and the love you send me from all across the globe! This little blog is constantly growing and I have some super fun ideas (giveaways) planned in the new year (because let’s be honest, it probably won’t happen before the Holidays).

Salted Honey Pie. It looks kind of similar to my Salted Caramel Pie . I am usually not a huge pie person but this…this looks amazing. Wait. Did I just say that? I am a huge pie person. I’m a huge anything dessert/sweet person. I think at this moment I just want a giant slice of Chocolate Peanut Butter Cake …Cravings, they are my life.

Classic Butternut Squash Soup

Wow. I am a terrible blogger and friend. I have been away for far too long without a warning. I promise it has been in good faith and for a great reason…we got a puppy!

I’m absolutely in love. Yes, he is a lot of work, but he’s soooo worth it! His name is Badger and he is a Shiba Inu. I promise to post pictures soon (if you follow me on Instagram, @bethanyevon, you’ll find lots of pictures there).

Now that you’ve forgiven me for the absence lets talk about my favorite soup. Things just taste better in the fall. It’s that simple. Those spices and flavors you only enjoy this time of year make the dreary weather bearable and almost desirable.

Lately

Happy (almost) Halloween!!!
I love this time of year. Crisp weather, the smell of leaves and fires burning (don’t get that in the city as much as at home), delicious hot drinks and candy on candy on candy. I bought two jumbo bags of Halloween candy for a little get together we had last weekend. I’ve eaten most of it on my own. You can tell a LOT about a person depending on the types of Halloween candy they buy. I saw a woman at Target buying a giant bag of Smarties yesterday and I think I actually shook my head. No offense if you bought/love Smarties. But I don’t get it. I want the real deal candy. I’m talking the stars of Halloween…the pumpkin Reese’s Peanut Butter Pumpkins. Can I get an amen. Alllllll that peanut butter stuffed inside some gooey milk chocolate…my dreams are made up of peanut butter pumpkins.

I’m also all about the Twix/Butterfinger/KitKat. And of course all the fruity stuff: Skittles, Starburst, Sour Patch Kids. YUM. My jars of Halloween candy are staring at me right now and it is taking all the willpower I have to not throw my computer/cat from my lap and sit on the floor eating candy until I’m sick (not like I’ve ever actually done that…).

They had trick-or-treating in the West Loop (my hood) last week and Mikey and I stared out the window like creeps watching all the little princesses and monsters walk by. There were also those 5 star parents who dressed up too and I just wanted to run down and hand them a beer and give them a hug. They were giving zero F’s and I loved it. Your kid thinks you are SO cool and you should enjoy it while it lasts because pretty soon they will hate you if you show up anywhere in any type of costume. Except the dad that was in the full on giraffe costume. Never stop wearing that thing and being that guy, you’re amazing.

Since I am in full on fall/Holiday spirits I found some stunning pictures that I am loving on lately! Enjoy your weekend and make sure you eat at least ONE piece of candy (but preferably 34) because it is the one time of year that you can do it without any guilt! Mikey and I have a tradition that he gets to pick 1 scary movie a year for us to watch around Halloween. I hate scary movies (he loves them) more than anything and tonight is the night. I’m going to have nightmares for weeks.

Lets talk about things that don’t scare me…like this stunning outdoor tablescape in the woods. This makes me miss living in the country sooooo bad it hurts. I live for these types of meals. How beautiful and creative! Someday I’m hosting a party like this!

Aren’t these cute! They are so pretty and festive and actually look like a caramel apple I would like to eat! The sticks are my favorite part and really take it from a basic candy apple to a beautiful (and tasty) decoration.

I think I’ve posted this picture before but I don’t even care. It’s so autumnal and speaks to my inner Wisconsinite because it has cheddar cheese, brie cheese and beer in it (as well as other delicious ingredients). Half Baked Harvest is my blog-crush fo sho.

Last but not least (and somewhat similar to the dinner party in the woods) is this fall picnic in the woods. Can you sense the trend. I love to eat fall things in the woods. I’ll stop talking about it. Witches Brew (Halloween Snack Mix)

I got into a discussion this past weekend with Mikey and his cousin, Danny, about candy corn.

It all started when I pulled out this bowl of Witches Brew and they commented on how candy corn is only good when combined with something salty, otherwise it’s gross. I fought them on it for a while (I’m stubborn) and tried to convince them that they taste like marshmallows because really they are only made of sugar and food coloring (another fact they didn’t believe).

They then went on to say that the candies don’t even look like corn, which was when I brought up the pumpkin shaped candy corn (still bad according to them but I think even better). I always loved the pumpkin candy corn the most for a few reasons.
A. They were bigger. Bigger = more sugar, duh.
B. You could bite the green tops off first and that’s super fun (although with regular candy corn you can eat it in 3 bites/colors, also fun).
C. My grandma always sent them to us/had them at her house so they evoke great memories of her which makes everything taste better as well.

DSC_0003 This brings me to another factor within this delicious and thought-out combo of Witches Brew…Bugles!

Mikey was golfing with a friend about a month ago and he brought him lunch, which included a few bags of Bugles. Ever since then, Mikey has brought up Bugles and how great they are at least twice a week. I obviously had to include Bugles in this mix and boy am I glad I did. It lead our group of friends into quite the hilarious discussion about this underrated snack food.
I too have to agree that yes, they are indeed very salty and delicious. They are fun because you can put them on your fingers like a witch and (this is just me apparently) they taste “cold” when you bite into them (Probably from all the saturated fat/oil in them).
Who knew this Witches Brew could bring up so much conversation?!?

The last couple nuggets I want to share about this yummy mix is that you can ALWAYS switch ingredients to make it your own. For example: Candy corn with just salted peanuts is a dream come true. Think a fluffer-nutter sandwich.  You could do regular popcorn instead of (my favorite) Chicago mix popcorn. If you’re not familiar, let me change your life. It’s cheese popcorn mixed with caramel popcorn. If you ever get a chance to try Garrett’s Chicago Mix popcorn, you MUST MUST DO IT. Your life will be forever changed forever.

That is all I have for you on this wildly exciting snack mix. The sky is the limit when it comes to flavor combos in this mix. Sprinkle it with melted chocolate, add any chip or pretzel flavor of choice. We added chocolate covered pretzels by the end of the night and that was great too!

Whatever you do, throw together a batch and watch it quickly disappear (or notice what people pick out of it first, probably the Bugles, and then just add more of that next time).

It really feels like fall today in Chicago! I don’t really mind the cozy rain and cooler temps to be honest. I feel blessed to have enjoyed so many warm fall days so far this year so I won’t complain. Plus, I can’t wait to see all the cute kids dressed up and trick-or-treating this weekend for Halloween! This would be a super fast, easy and fun “craft” to make with some kiddo’s as well. Have them pour all the different ingredients into a bowl and stir it up! Or make this hump day a little better and make yourself/friends/office an afternoon snack!

Witches Brew Snack Mix

  • Difficulty: easy
  • Print

Ingredients:
1 Bag Bugles
2 Cups Candy Corn
2 Cups Salted Peanuts
1 Bag (or 1/2, about 5-7 cups) Chicago Mix Popcorn
2 Cups Pretzels (I actually wished I had smaller shapes. Small O’s would be great)

Directions:
Combine all ingredients in a large bowl and gently toss. Serve and enjoy!
