Sausage and Root Vegetable Roast

Comfort can be found in a roasting pan.

Add a few vegetables, some herbs and some meat and you’re well on your way to a delicious meal.

It is warm, colorful and full of healthy veggies!

You can substitute any of the vegetables, herbs or meat depending on what you have on hand/are in the mood for.  Chicken would be amazing.  So would red onion, shallots, pears and potatoes.  Be adventurous.  It’s hard to mess this dish up.  Throw it all together in a pan and roast for about and hour.  Your home will be filled with an amazing aroma and I promise this meal will fill you with comfort!

Triple Decker Rice Krispie Treats

Moving = do not buy groceries.

So I decided to search though the pantry and come up with something sweet for you.

Things I found: Rice Krispies, peanut butter, chocolate chips, Kraft caramels and marshmallows…

Sounds like a delicious discovery.

What I came up with were some triple decker Rice Krispie treats.  Regular Rice Krispies followed by a peanut butter marshmallow layer, caramel layer and chocolate layer.

We are settling into our new place and I will try to spend some time in the kitchen and share some new recipes with you soon!

Pumpkin Cake with Caramel Walnut Sauce

Sometimes I get these ideas in my head and I just can’t get them out.

This cake was one of them.

It was a combination of a few different recipes and ingredients that I had on hand, and I’m glad this was one idea I didn’t ignore.  This cake is sweet, but the spices help cut through the rich caramel sauce and give it that perfect fall flavor.

Sorry I have been a bit absent the past couple weeks, Mikey and I are moving!  So I will warn you now that I may not be baking that often as we get settled.  We’re not moving anywhere exotic, just closer to downtown…but a move is a move and we have gathered a LOT of junk over the past two years!

Cranberry Sauce

We took a trip back to my hometown in northern Wisconsin a couple weeks ago.

We wanted to enjoy the crisp fall weather and see the beautiful colors of the changing leaves that you miss out on living in the city.

There is a festival that takes place every year called “Cranberry Fest” and we decided to brave the cold and crowds for a few bags of cranberries and kettle corn.  It was well worth it.

My Mom, whom my love for baking comes from, insisted we make a fresh batch of cranberry sauce for my blog.

The sauce came from these berries!

Pasta e Fagioli

It is soup season.

Which just so happens to be my favorite season!

This is my adaptation of one of Mikey’s favorite soups from a little cheese shop he grew up by.  It is hearty and rich and the perfect addition to this fall weather.

You can substitute just about anything in this soup which makes it even better.  I used pancetta, but you could use sausage, ground beef or turkey and add different shaped pasta or beans.
