Delicious Green Kale Smoothie

Mikey and I have become smoothie connoisseurs.

We have slowly perfected our favorite green smoothie and I decided to share the recipe with you today. There are thousands of smoothie recipes out there and we love experimenting with all different types of fruits, veggies and healthy mix-ins.

Don’t be afraid of the kale or spinach. You can’t taste the veggies! The natural energy boost you get from this smoothie is amazing and you will love how healthy and satisfied you feel after sipping one! Mikey and I have tried a million recipes and realized if you add banana or pineapple, you completely mask any weird veggie taste. This just tastes like a sweet milkshake. I PROMISE!

Mikey and I go to hot yoga often and we always like to cool off after with a smoothie. Sometimes we go in the morning before work and don’t have much time to spend making smoothies. We always used our Magic Bullet which would work, but took a bit of time to shake and add more liquid to. Plus it was a little small and we always had to make two batches.

This year for Valentines day we decided not to do gifts. As always, that didn’t work out too well as we both ended up getting gifts for each other. Mikey walked in with this big wrapped box and I was intrigued. I opened it up and inside was a NutriBullet. I was confused. I asked him why we would need a NutriBullet when we have a perfectly fine Magic bullet.

He then explained to me how it had a way bigger engine and that I needed to watch the informercial and that it was so great for making smoothies and way faster, etc, etc.

I didn’t understand and I was a little perturbed because it seemed to me that he bought the blender so I would make him smoothies in the morning…which was partly true.

Well let me tell you, the NutriBullet is amazing. It literally pulverizes (their word, not mine) your smoothie ingredients into a smooth puree in no time at all! I went from a hater to a believer in just a few seconds!

I like to keep all my ingredients in the freezer as that way I don’t have to add any ice. I buy organic kale in bulk and then wash it, remove the thick veins and put it into small baggies and freeze it until we need it. I do the same with spinach leaves. I always like to add a few pieces of frozen banana (no more than half) and a couple pieces of pineapple. We then add lots of other fruits depending on what is in season or in the freezer.

Finally, I add anything from chia seeds, flax seed, protein powder, peanut butter, oats, yogurt, cinnamon, cayenne pepper, orange juice, almond milk, coconut milk…the list goes on!

Funfetti Softbatch Cookies

DSC_0121In high school I was a die hard fan of anything cake batter/funfetti flavored.

My Mom, the baker extraordinaire, would ask me what kind of cake I wanted for my birthday and (secretly) cringe every time I said I wanted a funfetti from a box.

Funfetti really blew up in the early 2000’s and everyone jumped on the bandwagon. There were Funfetti Poptarts, oatmeal, Oreo’s, cereal’s, ice cream flavors, not to mention those soft batch vanilla frosted cookies that were made of plastic and you could buy at any Wal-Mart or gas station for miles. You name it, there was a funfetti flavor to be had. My friends and I would find any excuse to make a funfetti cake (mostly to eat the batter). It was an addiction.

I think at some point along the way I OD’d on some funfetti cake batter and could no longer handle the extreme sweet vanilla/marshmallow flavor that I had once loved. A few years have passed since then and when I saw these cookies my love for funfetti was instantly awakened from the depths of my soul.

They are amazing. The extracts and Jimmies (sprinkles) give them that fake/overly candy like flavor that comes from anything with the funfetti title. They are extremely soft and melt in your mouth. They are buttery and like all things funfetti…addicting!

Banana Bread Scones with Cinnamon Sugar Filling

Brunch is served!

Grab your coffee (or a refill), grab a scone, sit back and relax.

The weekend is here! And a long weekend at that! Which means you have time to make breakfast or an afternoon treat for your family or friends!

These scones are amazing because they taste like banana bread and they have a gooey cinnamon and sugar center. They are not as dry as a typical scone because the mashed banana adds some moisture and the gooey center keeps them from drying out as well.

I will admit my dough was not chilled enough and my scones spread out like crazy in my pan, forming one giant scone…I was able to salvage them and cut them into some odd triangular and square shapes. Not the most beautiful things in the world…but they tasted great!

Lately

Raspberry Mojito

The Strawberry Margarita that I posted for Cinco De Mayo was so popular that I decided to share another drink with you!

Mikey and I don’t make many cocktails in the winter. I stick to wine and Moscow Mules, and he sticks to Manhattans.

But when the weather turns warm we both like to make fruity and seasonal drinks to have on the balcony or up at the lake! I had all the ingredients for this raspberry Mojito and was happy with the way it turned out!

You can customize it any way you want with different fruits like mango, kiwi, blueberry, or an infused simple syrup. You could also use a flavored La Croix or grapefruit soda to add some fizz and flavor. The list is never ending!
