Salted Peanut Chews

I’m usually sold on anything with marshmallows. I love them so much. It is my favorite ice cream topping.

Mmmmm, Fluff.

My favorite sandwich in high school was a fluffernutter. My mom made my lunches. I was spoiled…

still am…

That probably wasn’t the healthiest choice of sandwich…

Oh well.

I’ll actually show you how to make marshmallows from scratch someday!

Let me introduce you to my crack: Salted Peanut Chews

Spinach & Artichoke Dip

So you have probably just assumed that this is a baking blog.

It isn’t supposed to be that way.

Mikey doesn’t even really like sweet stuff…

So I’ve decided to share some real food with you.

That’s a lie.

This should not be considered real food. You can make this with your eyes closed. It’s that easy. I made this for a family holiday and it was a hit.

I feel like these types of dip are all the same. A can of this, a bottle of that, lots of cheese and probably some mayo…tastes good though.

So here you go. Here is my first non-dessert item. It’s not impressive at all. Feel free to judge me alllll you want. I promise I know how to cook (or at least I’m learning). I promise to start sharing some real life and mostly healthy foods with you soon:)

Wait, one more thing:

I’m a dirty liar.

I told you I wouldn’t include these “group shots” anymore…I took this a long time ago, and it helps you grasp how simple the recipe is.

Sorry.

The only ingredient you have to prep are the canned artichokes. You have to finely chop them…

Vanilla Bean Buttercream

Here is the vanilla bean buttercream recipe I used with the white on white cake.

Slice open a vanilla bean and scrape out all the little seeds.

Throw some softened butter into a mixing bowl.

Add the vanilla bean seeds and powdered sugar and whip it up.

It’s that easy! You can make this ahead of time or even freeze it. Just make sure you let it sit out and get up to a spreadable consistency before using it. Make sure you put your cake or cupcakes in the refrigerator if you are not planning on eating them right away. The butter will cause this frosting to melt.

Recipe: Vanilla Bean Buttercream

 1 1/2 sticks butter, softened
1 tsp vanilla extract, plus 1 vanilla bean
3 1/2 – 4 cups powdered sugar
If the frosting is too thick you can add in milk a tiny bit at a time until you reach desired consistency.

Vanilla Bean Cake

I have always been intimidated by real vanilla beans.

But I have this amazing cousin, Hannah.

I miss her a lot.

She lives in Africa and brought these back for my mom.

My mom is a great sharer. I’m still working on it.

My father in law celebrated his birthday a couple weeks ago and he requested a white on white cake.

He has amazing taste. White on white is my favorite cake too! I had never made a white on white cake and therefore called up my mom for a recipe. She had made cupcakes with this recipe and said it would make a delicious cake.

It did. It was a little complicated, but only because it has some weird steps/ingredients (boiled water???).

My giant fear of this cake was that it wouldn’t be moist. It ended up being fine, but I was pretty petrified.
