Homemade Marshmallows

Who is ready to up their hot chocolate game?

These homemade marshmallows are sure to boost your street cred and gain you some major points with Grandma this holiday season.

DSC_0312 If you have been looking for something fun to bring to Thanksgiving dinner but your sweet Mom/Aunt keeps telling you they’ve got it covered…these marshmallows are your ticket to getting out of dish duty!

Once the meal is over and it is time for dessert, you can bust out some hot chocolate, add some booze (of course) and then top it all off with a fluffy, giant, vanilla bean specked marshmallow.

Everyone will be impressed (and tipsy) which means extra hugs and kisses (which can be a good thing or bad thing depending on which distant relatives show up).

DSC_0313I made some homemade hot chocolate to try with these marshmallows and promise to share that recipe asap! It doesn’t matter if its homemade, or from a packet (sometimes nothing tastes better than a packet of Swiss Miss) or just straight Baileys…these marshmallows will be a welcome addition to the hot drink of your choice this Thanksgiving and Christmas.

You could also add some fun food coloring to these if you were feeling extra festive. Or omit the vanilla beans if you don’t have those on hand. You could also coat these in chocolate and add some fun decorations to them if you wanted to serve them as treats rather than put them into your drinks. No matter what you do, I hope you make them and share them with all your friends (or dip them in chocolate and share them with no one but your cat). DSC_0352

Stuffed Peppers

One of our favorite comfort foods is stuffed peppers. There are so many different ways to prepare them but our favorite way is this Italian recipe.

I add tons of spices and then top them with a layer of marinara (Mikey calls it gravy, but I’m not Italian..so gravy to me is brown and goes on potatoes) and a hefty handful of cheeses.

These are also a great meal that you can prep ahead of time and freeze. I made this batch for a friend who is a new Mom and needed something comforting and easy to re-heat.

You can make these in so many different ways. You can also stuff tomatoes with this filling or you can adjust the meat and use either chicken, pork or turkey instead of beef. They are a delicious, low carb meal (but serving them with extra sauce and bread is absolutely delicious!).

Lately

Ahoy Folks!

It’s Friday! And we finally had to turn on our heat. Boo. BUT, there are plus sides to winter weather, right? Like eating delicious and decadent cakes, cookies and sweets such as this gorgeous Fig Almond Tea Cake with Coconut Honey Glaze from the Hungry Rabbit. I’ve told myself I need to make this cake for Thanksgiving…but I’m not making any promises.

Another plus side to the chilly temps is that you can bust out (or buy) super cute winter clothes! I LOVE having four seasons (even though I complain about the cold a lot) and one of the main reasons is because I can shop for all kinds of different weather. I’m obviously obsessed with Alexa Chung and think she is perfect. So of course her collaboration with Tommy Hilfiger is phenomenal…and expensive.

And per usual, Buzzfeed does it again. This time with a list of things that every cat owner wants to buy…

This one is my favorite. And you may even have an extra one lying around…the keyboard “decoy” is a cat owner necessity. If you’re a cat owner you understand the struggle that it is to try and type or get anything done when your cat decides it’s nap-time on your keyboard.

Pumpkin Spice White Chocolate Cookies

I feel like putting the words “Pumpkin Spice” in any recipe will double my views on pinterest…right? It seems like everywhere I look online there are recipes for “at-home” pumpkin spice lattes. Whether it’s the actual drink or an egg dish…people can’t seem to get enough pumpkin spice. Way to go Starbucks.

I will have one pumpkin spice latte a season just because I’m basic and I love how it makes me feel like I’m turning into a pumpkin. I am a total sucker for seasonal things…no matter the season. I just tried a Sugar Cookie Latte from Dunkin Donuts for goodness sake…I can’t help it (it was delicious by the way).

Judge me all you want. I love coffee. I love the Holidays. I love getting coffee and drinking cider and feeling like I need to order the thing that will make me feel the MOST in the Holiday spirit. It’s the way I was made. My family is Holiday crazy. And I love it. Mikey has finally accepted the fact that I’m a crazy person (more so during the Holiday’s) and no longer tries to talk me out of putting up our Christmas tree on Thanksgiving or filling out apartment with “Fallen Leave” scented candles.

These cookies are definitely more of a Whoopie-Pie or cake texture, but they work. They are light and fluffy and then you get sweet white chocolate followed by spicy cinnamon and ginger and clove. Everything you could ever want from a pumpkin spice cookie!

Lately

Thank you all for your sweet notes and comments congratulating me on my 5,000 followers. Even though it’s not a big deal to many, it was a fun milestone for me!

I feel like the weeks are FLYING by and I am shocked that we are already a week into November. Time needs to take. a. chill. pill. and slowwwwww downnnnnnn. I am, however, glad that it’s Friday! Mikey and I have a relaxing weekend of hanging out with some friends ahead of us. Just what we need after our crazy housewarming party and Halloween last weekend! Bundle up and stay warm, It seems like those 70 degree days are behind us now (booooo).

Here are some of the things I’m crushing on lately.

I am a big fan of Edamame. Any shape or form, I’m always drawn to the little green guys and this delicious Edamame Soup looks fantastic!

I’m sure you’re all aware of my obsession with Alexis Bittar…and he has yet again made a piece (and a ring to match) that I am completely enamored with.

I really think I need to get this fire escape shelf and hang it outside on our patio. Living on the top floor of a walk up, our back stairs at times feel like a fire escape. I just love how adorable this is and think it would be perfectly ironic on our porch, filled with herbs and succulents!
