Sometimes simple is best.
A simple yogurt based bread with vanilla beans and an orange glaze.
With a simple recipe comes a simple post.
If you’re like me, you can’t wait for fall weather, food, drinks, long pants and flannels. (And of course…football!)
Until then, I hope you are doing well and enjoying these fleeting days of summer!
Recipe: Vanilla Yogurt Bread with Orange Glaze
Ingredients:
1 2/3 Cups All Purpose Flour
1/2 Teaspoon Baking Powder
1/4 Teaspoon Baking Soda
1/2 Teaspoon Salt
1 Egg
1 Egg Yolk
1 Cup Granulated Sugar
1 Vanilla Bean, Seeds only, discard pod.
1 1/2 Tablespoon Vanilla Extract
7 Ounces Greek Yogurt
1/2 Cup Vegetable Oil
4 Tablespoons Orange Juice, Divided
For the Glaze:
1 1/2 cups powdered sugar
5 Tablespoons Orange Juice
Directions:
Spray two small 6×3.2×3.4 inch loaf pans, or oil and flour and set aside.
Preheat oven to 350 degrees.
In the bowl of a stand mixer, combine eggs and sugar, beating until light yellow, about 3 minutes.
Add vanilla extract, bean seeds and oil, beating for another minute.
In a medium bowl, sift flour, baking soda, powder and salt together.
Add half dry ingredients to egg mixture and mix. Follow with half the greek yogurt and 2 tablespoons of orange juice. Once combined, finish off with rest of dry flour mixture, stirring until incorporated.
Pour into loaf pans and bake for about 35-40 minutes, or until a toothpick inserted into the middle comes out clean.
While baking, combine powdered sugar and orange juice.
When bread finishes baking, remove from oven and poke holes with a toothpick or chopstick all over the bread. Remove from pans and place on a cooling rack.
While bread is still warm, pour or spread glaze over top and let cool/harden.
Slice and serve!
I found this recipe on a blog randomly. It’s a cute website and you can check it out here.
